Dawadawa, also known as sumbala or netetou, is the fermented dried seeds of the African locust bean. It has a strong scent and is used as a condiment in many West African countries.

Dawadawa’s overall use has been decreasing because of bouillon cubes. However, most people are unaware that dawadawa is highly nutritious, unlike bouillon cubes which are possibly harmful because they contain MSG (Monosodium Glutamate).

How is Dawadawa Made?

Dawadawa is made by fermenting African locust beans, the fermentation process may take up to 48 hours. The fermentation process consists of boiling, to help to dehull the seeds. The dehulling is done by pounding the seeds in a mortar; the beans are then washed and boiled again.

After those steps, the beans are put in a plastic bag that is left in a wooden box to ferment for 40 hours. Finally, the last step consists of putting the fermented beans in a solar food dryer and they will be ready to be consumed.
